Description
A hearty and nutritious soup made with a mix of 15 different beans.
Ingrédients

- 1 cup 15 bean mix
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse and soak the 15 bean mix overnight.
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Stir in the soaked beans, diced tomatoes, and vegetable broth.
- Add cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Serve hot and enjoy.

- You can add meat for extra flavor.
- Adjust seasoning to your taste.
- Store leftovers in the refrigerator for up to 3 days.
