Instructions

  1. Rinse and soak the 15 bean mix overnight.
  2. In a large pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for another minute.
  4. Stir in the soaked beans, diced tomatoes, and vegetable broth.
  5. Add cumin, paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
