- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, mix flour, salt, pepper, and garlic powder.
- Coat each shrimp in the flour mixture.
- Dip the shrimp in the beaten eggs.
- Roll the shrimp in a mixture of shredded coconut and panko breadcrumbs.
- Place shrimp in the air fryer basket in a single layer.
- Spray the shrimp lightly with cooking spray.
- Cook for 8-10 minutes, flipping halfway through.
- Remove when golden brown and crispy.
