Instructions

  1. In a bowl, mix achiote paste, orange juice, lime juice, garlic, cumin, salt, and pepper.
  2. Add chicken thighs to the marinade and coat evenly.
  3. Cover and refrigerate for at least 1 hour or overnight for better flavor.
  4. Preheat the grill to medium-high heat.
  5. Grill chicken for about 6-7 minutes on each side or until fully cooked.
  6. Remove from grill and let rest for a few minutes before slicing.
