Ingrédients

  • 1 cup peanut butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup sweet potatoes, cubed
  • 1 bell pepper, chopped
  • 2 cups spinach
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Add chicken pieces and brown on all sides.
  4. Stir in diced tomatoes and peanut butter until well combined.
  5. Add chicken broth, sweet potatoes, and bell pepper.
  6. Bring to a boil, then reduce heat to simmer.
  7. Cook for 30 minutes or until chicken is tender.
  8. Stir in spinach and cook for an additional 5 minutes.
  9. Season with salt and pepper.
  10. Serve warm.
