Description
A hearty and flavorful African chicken peanut stew.
Ingrédients

- 1 lb chicken, cut into pieces
- 1 cup peanut butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 cup sweet potatoes, cubed
- 1 bell pepper, chopped
- 2 cups spinach
- Salt to taste
- Black pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat oil in a pot over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Add chicken pieces and brown on all sides.
- Stir in diced tomatoes and peanut butter until well combined.
- Add chicken broth, sweet potatoes, and bell pepper.
- Bring to a boil, then reduce heat to simmer.
- Cook for 30 minutes or until chicken is tender.
- Stir in spinach and cook for an additional 5 minutes.
- Season with salt and pepper.
- Serve warm.

- Serve with rice or bread.
- Adjust peanut butter for desired creaminess.
