Ingrédients

  • 1 large eggplant, sliced into 1/2 inch rounds
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the eggplant and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  3. Pat the eggplant slices dry with a paper towel.
  4. Place the eggplant slices in the air fryer basket in a single layer.
  5. Cook for 10 minutes, flipping halfway through.
  6. Remove the eggplant and top each slice with marinara sauce, cheese, pepperoni, and Italian seasoning.
  7. Return to the air fryer and cook for an additional 5 minutes until the cheese is melted.
  8. Serve hot and enjoy your mini pizzas.
