Ingrédients
- Cauliflower – 1 head
- Chickpeas – 1 can
- Quinoa – 1 cup
- Vegetable broth – 2 cups
- Olive oil – 2 tablespoons
- Garlic – 3 cloves
- Onion – 1 medium
- Spinach – 2 cups
- Seasoning – to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Chop cauliflower and toss with olive oil, garlic, and seasoning.
- Roast cauliflower for 25 minutes.
- Cook quinoa in vegetable broth according to package instructions.
- Sauté onion and chickpeas in a pan until golden.
- Add spinach and cook until wilted.
- Combine quinoa, chickpeas, and spinach in a bowl.
- Serve roasted cauliflower on top of the quinoa mixture.
