  • Spinach – 2 cups
  • Seasoning – to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop cauliflower and toss with olive oil, garlic, and seasoning.
  3. Roast cauliflower for 25 minutes.
  4. Cook quinoa in vegetable broth according to package instructions.
  5. Sauté onion and chickpeas in a pan until golden.
  6. Add spinach and cook until wilted.
  7. Combine quinoa, chickpeas, and spinach in a bowl.
  8. Serve roasted cauliflower on top of the quinoa mixture.
