  • 56 kaffir lime leaves
  • 34 slices galangal
  • 200g mushrooms, sliced
  • 23 Thai chilies, smashed
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Cilantro for garnish

Instructions

  1. In a pot, combine coconut milk and chicken broth.
  2. Add lemongrass, kaffir lime leaves, and galangal.
  3. Bring to a simmer over medium heat.
  4. Add chicken slices and cook until no longer pink.
  5. Add mushrooms and chilies; cook for 5 minutes.
  6. Stir in fish sauce and lime juice.
  7. Remove from heat and garnish with cilantro.
