- 2 cups cooked shredded chicken
- 1 cup shredded cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 4 large flour tortillas
- 1/4 cup salsa
- Cooking spray
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the chicken, cheese, black beans, corn, cumin, chili powder, garlic powder, onion powder, and salsa.
- Spoon the filling onto each tortilla.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Place the chimichangas seam side down on a baking sheet.
- Spray the tops with cooking spray.
- Bake for 25-30 minutes or until golden brown.
- Serve with additional salsa or toppings of your choice.
