- 3 ripe bananas
- 1 cup wholemeal flour
- 1/2 cup sugar
- 1/4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup mixed dried fruit
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the bananas until smooth.
- Add melted butter and mix well.
- Stir in sugar, eggs, and vanilla extract.
- In another bowl, combine wholemeal flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the banana mixture.
- Fold in the dried fruit.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftover banana bread in an airtight container.
- This bread can be frozen for later use.
- Feel free to use any dried fruit you prefer.
