A delicious banana pudding cake layered with creamy pudding and whipped topping.

- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 1 cup buttermilk
- 3 large eggs
- 2 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups whipped topping
- Banana slices for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the butter and sugar until light and fluffy.
- Add eggs, mashed bananas, and vanilla extract. Mix well.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, alternating with buttermilk. Mix until just combined.
- Pour the batter into a greased cake pan and bake for 25-30 minutes.
- Let the cake cool completely.
- Prepare the pudding according to package instructions and let it set.
- Spread the pudding over the cooled cake.
- Top with whipped topping and garnish with banana slices.
- Refrigerate for at least 2 hours before serving.

- Store leftovers in the refrigerator.
- Use ripe bananas for better flavor.
