Instructions

- In a skillet, heat olive oil over medium heat. Add chopped vegetables and sauté until tender.
- Fluff the quinoa with a fork and mix in sautéed vegetables.
- Add salt, pepper, and fresh herbs. Stir to combine.
- Serve warm as a side dish.
