A delicious and healthy BBQ chicken sweet potato bowl.

- 2 medium sweet potatoes
- 2 chicken breasts
- 1 cup barbecue sauce
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup corn (optional)
- 1/2 cup black beans (optional)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- Toss sweet potatoes with olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- While sweet potatoes are roasting, season chicken breasts with garlic powder, salt, and pepper.
- Grill or pan-sear chicken until fully cooked, about 6-7 minutes per side.
- Remove chicken from heat and coat with barbecue sauce.
- Once sweet potatoes are done, assemble the bowl: place sweet potatoes, sliced chicken, corn, and black beans.
- Drizzle extra barbecue sauce on top and garnish with cilantro.
