Description
A flavorful beef roast cooked slowly in a crockpot.
Ingrédients

- 3–4 lbs beef roast
- 1 cup beef broth
- 2 cups carrots, chopped
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 tsp salt
- 1 tsp black pepper
- 2 tsp dried rosemary
- 2 tsp dried thyme
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Season the beef roast with salt and pepper.
- Sear the beef roast on all sides until browned.
- Place the roast in the crockpot.
- Add carrots, onion, and garlic around the roast.
- Pour beef broth over the roast.
- Sprinkle rosemary and thyme on top.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for tenderness before serving.
Notes
- Serve with mashed potatoes.
- Leftovers can be stored in the refrigerator for up to 3 days.
