Description

A flavorful beef roast cooked slowly in a crockpot.


Ingrédients

  • 34 lbs beef roast
  • 1 cup beef broth
  • 2 cups carrots, chopped
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp dried rosemary
  • 2 tsp dried thyme
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season the beef roast with salt and pepper.
  3. Sear the beef roast on all sides until browned.
  4. Place the roast in the crockpot.
  5. Add carrots, onion, and garlic around the roast.
  6. Pour beef broth over the roast.
  7. Sprinkle rosemary and thyme on top.
  8. Cover and cook on low for 8 hours or high for 4 hours.
  9. Check for tenderness before serving.

Notes

  • Serve with mashed potatoes.
  • Leftovers can be stored in the refrigerator for up to 3 days.
