Description
A classic beef Wellington features tender beef wrapped in pastry with mushrooms and pâté.
Ingrédients

- 1.5 lbs beef tenderloin
- 8 oz mushrooms, finely chopped
- 4 oz pâté
- 1 sheet puff pastry
- 1 egg, beaten
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef with salt and pepper.
- In a pan, heat olive oil and sear the beef on all sides. Remove and let cool.
- In the same pan, cook the mushrooms until moisture evaporates. Let cool.
- Spread pâté over beef, then top with mushrooms.
- Wrap beef in puff pastry and seal edges.
- Brush with beaten egg.
- Bake for 25-30 minutes until golden brown.
- Let rest before slicing.

- Ensure the beef is at room temperature before wrapping.
