Ingrédients

  • 1.5 lbs beef tenderloin
  • 1 cup mushrooms, finely chopped
  • 4 slices prosciutto
  • 2 tbsp Dijon mustard
  • 1 sheet puff pastry
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin with salt and pepper.
  3. Sear the beef in a hot pan for 2-3 minutes on each side.
  4. Remove the beef and let it cool.
  5. In the same pan, cook the mushrooms until dry and let cool.
  6. Spread Dijon mustard over the beef.
  7. Wrap the beef with prosciutto and mushrooms.
  8. Roll out the puff pastry and wrap the beef tightly.
  9. Brush the pastry with beaten egg.
  10. Bake for 25-30 minutes until golden brown.

  • Let the Beef Wellington rest for 10 minutes before slicing.
