- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder

- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 cup evaporated milk
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour three 9-inch round cake pans.
- In a bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Stir in boiling water until well combined.
- Pour batter evenly into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to wire racks.
- For frosting, cook brown sugar, butter, and evaporated milk in a saucepan over medium heat.
- Add coconut and pecans, stir until thickened.
- Spread frosting between cake layers and on top.
- Allow cake to set before serving.
