This is the best homemade creamy potato soup recipe that is rich and comforting.

- 6 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
- Chives for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until translucent.
- Add carrots and potatoes; cook for a few minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream; cook for another 5 minutes.
- Season with salt and pepper to taste.
- Garnish with chives before serving.
Notes
- For a thicker soup, blend more of the potatoes.
