A refreshing quinoa salad with feta cheese and vegetables.


Ingrédients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley.
  7. Add cooled quinoa to the bowl.
  8. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  9. Pour dressing over salad and toss to combine.
  10. Serve chilled or at room temperature.
