This is the best spinach frittata ever. It’s simple to make and packed with flavor.

- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- 1 small onion, diced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Sauté the onion until translucent.
- Add the chopped spinach and cook until wilted.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Stir in feta cheese and the sautéed vegetables.
- Pour the mixture back into the skillet.
- Cook on the stove for 2-3 minutes until the edges set.
- Transfer the skillet to the oven and bake for 15-20 minutes until fully set.
- Let it cool slightly before slicing and serving.

- Use fresh spinach for the best flavor.
- Feel free to add other vegetables like bell peppers or mushrooms.
