- 2 cups birria meat, shredded
- 8 corn tortillas
- 1 cup cheese, shredded
- 1/2 cup onion, chopped
- 1/4 cup cilantro, chopped
- 2 cups birria broth
- 1 tablespoon vegetable oil
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Soften the tortillas in the pan for a few seconds on each side.
- Fill each tortilla with shredded birria meat and cheese.
- Roll the tortillas and place them seam-side down in a baking dish.
- Pour birria broth over the enchiladas.
- Bake at 350°F (175°C) for 20 minutes.
- Garnish with onion and cilantro before serving.
