A tasty and nutritious black eyed peas recipe that is easy to prepare.

- 1 cup black eyed peas, dried
- 4 cups water
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 2 tablespoons olive oil
Instructions
- Rinse the black eyed peas under cold water.
- Soak the peas in water for at least 4 hours or overnight.
- Drain and rinse the peas again.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until tender.
- Add black eyed peas, water, salt, pepper, and cumin.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until peas are tender.
- Serve warm.

- Soaking the peas reduces cooking time.
- Adjust seasoning to taste.
