- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced

Instructions
- Rinse the black eyed peas under cold water.
- In a large pot, combine the peas and water. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- In a separate pan, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add smoked paprika, salt, and pepper to the onion mixture.
- Stir the onion mixture into the pot of peas.
- Simmer for an additional 15-20 minutes until peas are tender.
- Serve hot and enjoy.
