Instructions

  1. Soak black-eyed peas in water overnight.
  2. Drain and rinse peas.
  3. In a pot, combine peas and water. Bring to a boil.
  4. Reduce heat and simmer for 30 minutes.
  5. Add onion, garlic, bell pepper, tomatoes, cumin, salt, and pepper.
  6. Cook for another 20 minutes, until vegetables are tender.
  7. Serve hot.
