Ingrédients

- 1 cup black-eyed peas, dried
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
Instructions
- Soak black-eyed peas in water overnight.
- Drain and rinse peas.
- In a pot, combine peas and water. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add onion, garlic, bell pepper, tomatoes, cumin, salt, and pepper.
- Cook for another 20 minutes, until vegetables are tender.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Serve with rice or cornbread.
- Store leftovers in the refrigerator.
