Ingrédients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Heat olive oil in a large pot over medium heat.
  3. Brown the lamb shanks on all sides.
  4. Remove shanks and add onion, carrots, and garlic. Cook until softened.
  5. Pour in the red wine and scrape up any brown bits.
  6. Add beef broth, thyme, rosemary, salt, and pepper.
  7. Return shanks to the pot, cover, and transfer to the oven.
  8. Braise for 2 to 3 hours, until meat is tender.
  9. Remove shanks and let rest before serving.

Notes

  • Serve with mashed potatoes or polenta.
  • Leftovers can be stored for up to 3 days in the refrigerator.
