A hearty breakfast casserole featuring crispy hashbrowns.

- 1 bag frozen hashbrowns (30 oz)
- 1 cup shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced ham or cooked sausage
- 1/2 cup chopped green onions
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine hashbrowns, cheese, meat, and green onions.
- In another bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture over the hashbrown mixture and stir to combine.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Bake for 45-50 minutes, or until the casserole is set and golden brown on top.
- Let it cool for a few minutes before serving.
Notes
- You can substitute the meat with vegetables for a vegetarian version.
- Prepare the casserole the night before and refrigerate it overnight.
- Customize with your favorite cheese or toppings.
