A simple recipe for delicious breakfast roll ups.
Ingrédients

- 4 large tortillas
- 4 eggs
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/2 cup cooked sausage, crumbled
- Salt and pepper to taste
Instructions
- In a bowl, whisk the eggs with salt and pepper.
- Heat a skillet over medium heat and scramble the eggs until cooked.
- Add the bell peppers and sausage to the skillet, mixing well.
- Lay a tortilla flat and place a portion of the egg mixture on it.
- Sprinkle cheese on top.
- Roll the tortilla tightly and repeat with remaining ingredients.
- Place the roll ups seam-side down in the skillet and cook until golden brown.
- Serve warm.
Notes
- You can add any vegetables you like.
- These roll ups can be made ahead and frozen.
- Serve with salsa or hot sauce for added flavor.
