Description
Delicious brown sugar pop tart cookies with a sweet filling.
Ingrédients

- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fruit jam or filling of your choice
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and brown sugar.
- Add the egg and vanilla extract, mix well.
- Gradually add the flour and salt, mixing until combined.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Cut the dough into rectangles.
- Place a small amount of fruit jam on half of the rectangles.
- Top with remaining rectangles and seal the edges.
- Bake for 12-15 minutes until golden brown.
- Let cool before serving.
Notes
- Use any fruit jam you like for the filling.
- Store in an airtight container.
- Can be frosted if desired.
