Description

  • 1 cup brown sugar, packed
  • 1/2 cup corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, and salt.
  3. Add butter and blend until mixture resembles coarse crumbs.
  4. Stir in cold water until dough forms.
  5. Roll out dough and cut into circles to fit muffin tin.
  6. Press dough into the muffin tin.
  7. In a separate bowl, whisk together brown sugar, corn syrup, eggs, and vanilla.
  8. Add raisins or walnuts if desired.
  9. Pour filling into pastry shells.
  10. Bake for 20-25 minutes until the filling is set.

Notes

  • Let the tarts cool before removing from the pan.
