Butter tarts are a classic Canadian dessert known for their flaky crust and sweet, gooey filling.

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 cup cold water
- 1 cup brown sugar, packed
- 1/2 cup corn syrup
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup raisins or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour and sugar. Cut in chilled butter until crumbly.
- Gradually add cold water until dough forms. Wrap in plastic and refrigerate for 30 minutes.
- Roll out the dough and cut into circles. Fit into muffin tin cups.
- In another bowl, whisk together brown sugar, corn syrup, eggs, melted butter, and vanilla.
- Add raisins or pecans if desired.
- Pour the filling into the pastry shells.
- Bake for 20-25 minutes until filling is set.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- Can be made a day ahead.
