Description
Cajun jambalaya is a flavorful rice dish with a mix of meats and spices.
Ingrédients

- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 pound chicken breast, diced
- 1 pound andouille sausage, sliced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 2 cups long-grain rice
- 2 teaspoons Cajun seasoning
- 1 bay leaf
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, bell pepper, celery, and garlic. Sauté until softened.
- Add chicken and sausage. Cook until browned.
- Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, and bay leaf.
- Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
- Remove bay leaf and fluff rice with a fork.
- Garnish with green onions before serving.
Notes
- Adjust the amount of Cajun seasoning to taste.
- You can add shrimp or other seafood if desired.
- Serve with hot sauce for extra spice.
