  • 1 pound andouille sausage, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 cups long-grain rice
  • 2 teaspoons Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, celery, and garlic. Sauté until softened.
  3. Add chicken and sausage. Cook until browned.
  4. Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, and bay leaf.
  5. Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
  6. Remove bay leaf and fluff rice with a fork.
  7. Garnish with green onions before serving.

  • Adjust the amount of Cajun seasoning to taste.
  • You can add shrimp or other seafood if desired.
