Ingrédients

  • 1 whole turkey (1214 lbs)
  • 1/4 cup Cajun seasoning
  • 1/4 cup olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cups chicken broth
  • 2 onions, quartered
  • 4 celery stalks, chopped
  • 4 carrots, chopped

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix Cajun seasoning, olive oil, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.
  3. Rub the mixture all over the turkey.
  4. Place the turkey in a roasting pan with onions, celery, and carrots.
  5. Pour chicken broth into the pan.
  6. Cover with foil and roast for 2 hours.
  7. Remove the foil and roast for an additional 1-1.5 hours until the turkey reaches an internal temperature of 165°F (74°C).
  8. Let the turkey rest for 20 minutes before carving.

Notes

  • Adjust spice level by modifying the amount of cayenne pepper.
  • Use fresh herbs for added flavor.
  • Make sure to baste the turkey every 30 minutes.
