Instructions

  1. Heat olive oil in a pot over campfire.
  2. Add rice and toast for 2 minutes.
  3. Pour in water and bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes.
  5. Add black beans, corn, and taco seasoning.
  6. Stir and cook for another 5 minutes.
  7. Remove from heat and top with cheese.
