Ingrédients

  • 4 chicken thighs
  • 2 cups jasmine rice
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 teaspoons curry powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt, pepper, and curry powder.
  2. In a large pot, heat oil over medium heat.
  3. Add chicken and brown on both sides.
  4. Remove chicken and set aside.
  5. Add onion, garlic, and bell pepper to the pot. Sauté until softened.
  6. Add rice and stir for 2 minutes.
  7. Add coconut milk and chicken broth. Stir well.
  8. Return chicken to the pot. Bring to a boil.
  9. Reduce heat, cover, and simmer for 20-25 minutes or until rice is cooked.
  10. Fluff rice with a fork and serve warm.
