A flavorful Caribbean dish featuring tender chicken and seasoned rice.
Ingrédients

- 4 chicken thighs
- 2 cups jasmine rice
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 1 can coconut milk
- 2 cups chicken broth
- 2 teaspoons curry powder
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Season chicken thighs with salt, pepper, and curry powder.
- In a large pot, heat oil over medium heat.
- Add chicken and brown on both sides.
- Remove chicken and set aside.
- Add onion, garlic, and bell pepper to the pot. Sauté until softened.
- Add rice and stir for 2 minutes.
- Add coconut milk and chicken broth. Stir well.
- Return chicken to the pot. Bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes or until rice is cooked.
- Fluff rice with a fork and serve warm.
Notes
- Adjust seasoning to taste.
- For a spicier dish, add hot sauce.
- Serve with lime wedges for extra flavor.
