Description
A flavorful dish combining chicken and rice with Caribbean spices.
Ingrédients

- 2 cups of rice
- 1 pound of chicken thighs
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can of coconut milk
- 2 cups of chicken broth
- 2 teaspoons of curry powder
- 1 teaspoon of thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, garlic, and bell pepper. Sauté until soft.
- Add chicken thighs and brown on all sides.
- Stir in rice and cook for 2 minutes.
- Add coconut milk, chicken broth, curry powder, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Cook for 20 minutes or until rice is tender.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Use bone-in chicken for more flavor.
- Adjust spices based on your taste.
- Serve with lime wedges for added zest.
