Ingrédients

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, garlic, and bell pepper. Sauté until soft.
  3. Add chicken thighs and brown on all sides.
  4. Stir in rice and cook for 2 minutes.
  5. Add coconut milk, chicken broth, curry powder, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Cook for 20 minutes or until rice is tender.
  8. Remove from heat and let sit for 5 minutes before serving.
