A moist and flavorful blend of carrot cake and banana bread.
Ingrédients

- 2 ripe bananas, mashed
- 1 cup grated carrots
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the mashed bananas and grated carrots.
- Add sugar, brown sugar, oil, eggs, and vanilla extract. Mix well.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture. Stir until just combined.
- Fold in walnuts if using.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool before slicing.
Notes
- Store in an airtight container.
- Can be frozen for up to 3 months.
