Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the mashed bananas and grated carrots.
  3. Add sugar, brown sugar, oil, eggs, and vanilla extract. Mix well.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add dry ingredients to the wet mixture. Stir until just combined.
  6. Fold in walnuts if using.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing.
