- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped walnuts
Instructions
- Preheat your oven to 325°F (160°C).
- Mix crushed graham crackers and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add vanilla and eggs, mixing well after each addition.
- Fold in grated carrots, cinnamon, nutmeg, and walnuts.
- Pour the mixture over the crust in the springform pan.
- Bake for 50-60 minutes until set.
- Let it cool, then refrigerate for 4 hours before serving.
Notes
- For best results, use room temperature cream cheese.
- Chill the cheesecake overnight for better flavor.
- Decorate with cream cheese frosting if desired.
