Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, whisk together oil and eggs.
  5. Add the wet ingredients to the dry ingredients and mix until combined.
  6. Fold in grated carrots, crushed pineapple, and walnuts.
  7. Divide the batter between the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. For frosting, beat cream cheese and butter until smooth.
  11. Add powdered sugar and vanilla, mixing until creamy.
  12. Spread frosting between the layers and on top of the cake.
