Description
A delicious carrot cake roll filled with creamy frosting.
Ingrédients

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 15×10 inch jelly roll pan.
- In a bowl, beat eggs and sugars until light.
- Add carrots, oil, and mix well.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture.
- Spread batter evenly in the prepared pan.
- Bake for 15 minutes or until a toothpick comes out clean.
- Remove from oven and let cool for 5 minutes.
- Roll the cake in a clean kitchen towel and let it cool completely.
- For the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Unroll the cake, spread the filling, and roll it back up.
- Chill for at least 1 hour before slicing.
Notes
- Store leftovers in the refrigerator.
- Use fresh carrots for better flavor.
- Decorate with nuts or extra frosting if desired.
