Description

A delicious carrot cake roll filled with creamy frosting.


Ingrédients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 15×10 inch jelly roll pan.
  3. In a bowl, beat eggs and sugars until light.
  4. Add carrots, oil, and mix well.
  5. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  6. Gradually add dry ingredients to the wet mixture.
  7. Spread batter evenly in the prepared pan.
  8. Bake for 15 minutes or until a toothpick comes out clean.
  9. Remove from oven and let cool for 5 minutes.
  10. Roll the cake in a clean kitchen towel and let it cool completely.
  11. For the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  12. Unroll the cake, spread the filling, and roll it back up.
  13. Chill for at least 1 hour before slicing.
