Ingrédients

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 15×10 inch jelly roll pan and line with parchment paper.
  3. In a bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, beat eggs and sugar until fluffy.
  5. Add oil and grated carrots to the egg mixture.
  6. Gradually mix in the dry ingredients.
  7. Stir in chopped walnuts.
  8. Pour batter into the prepared pan and spread evenly.
  9. Bake for 15-20 minutes until a toothpick comes out clean.
  10. While baking, prepare a clean kitchen towel, dusted with powdered sugar.
  11. Once baked, invert the cake onto the towel and remove the parchment paper.
  12. Roll the cake tightly with the towel and let it cool.
  13. For the filling, beat cream cheese and butter together.
  14. Add powdered sugar and vanilla, mixing until smooth.
  15. Unroll the cooled cake, spread the cream cheese filling, and roll it back up.
  16. Chill for at least 30 minutes before slicing.
