Ingrédients

- 1 head of cauliflower, grated
- 1 cup shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Grate the cauliflower to create rice-sized pieces.
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add shrimp and cook until pink.
- Stir in mixed vegetables and cook for 3 minutes.
- Add cauliflower rice and soy sauce, mix well.
- Push the mixture to one side and pour in the beaten eggs, scrambling them.
- Combine everything and cook for an additional 5-7 minutes.
- Season with salt and pepper before serving.
