Ingrédients

- 1 head of cauliflower
- 1 cup of gluten-free flour
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 egg
- 1/2 cup of pesto
- 1 tablespoon of olive oil
Instructions
- Steam the cauliflower until soft.
- Puree the cauliflower in a food processor.
- Add flour, salt, pepper, and egg to the puree.
- Mix until a dough forms.
- Roll the dough into small pieces and shape into gnocchi.
- Boil water and cook the gnocchi until they float.
- In a pan, heat olive oil and add the cooked gnocchi.
- Stir in pesto and cook for 2 minutes.
Notes
- Use fresh cauliflower for best results.
- Adjust flour quantity as needed for dough consistency.
- Store leftovers in the refrigerator.
