Description
A creamy and comforting cauliflower soup enriched with cheddar and garlic.
Ingrédients

- 1 medium cauliflower, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup sharp cheddar cheese, shredded
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in the chopped cauliflower and cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until cauliflower is tender, about 15 minutes.
- Blend the soup until smooth.
- Return the soup to the pot, add cream and cheddar, stir to combine.
- Season with salt and pepper, serve hot.
Notes
- For a lighter version, reduce the cream.
- Garnish with extra cheese or croutons if desired.
