A creamy and comforting cauliflower soup enriched with cheddar and garlic.


Ingrédients

  • 1 medium cauliflower, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in the chopped cauliflower and cook for 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until cauliflower is tender, about 15 minutes.
  6. Blend the soup until smooth.
  7. Return the soup to the pot, add cream and cheddar, stir to combine.
  8. Season with salt and pepper, serve hot.

Notes

  • For a lighter version, reduce the cream.
  • Garnish with extra cheese or croutons if desired.
