- 4 medium zucchinis
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides.
- In a bowl, mix ricotta, mozzarella, Parmesan, breadcrumbs, egg, garlic powder, Italian seasoning, salt, and pepper.
- Stuff the zucchini halves with the cheese mixture.
- Place the stuffed zucchinis on a baking sheet.
- Bake for 25-30 minutes until the zucchinis are tender and the cheese is bubbly.
- Let cool for a few minutes before serving.
