Ingrédients

- 2 medium zucchinis
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchinis into 1/2 inch thick steaks.
- In a bowl, mix olive oil, garlic, salt, and pepper.
- Brush the mixture onto both sides of the zucchini steaks.
- Place the steaks on a baking sheet lined with parchment paper.
- Bake for 15 minutes.
- Remove from the oven and sprinkle mozzarella cheese and Parmesan on top.
- Return to the oven and bake for an additional 5 minutes or until cheese is melted.
- Garnish with parsley before serving.
