- 2 pounds of potatoes
- 1 cup of shredded cheddar cheese
- 1/2 cup of sour cream
- 1/4 cup of milk
- 1 packet of ranch dressing mix
- 1/2 cup of cooked bacon bits
- 1/4 cup of chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and dice the potatoes into small pieces.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add sour cream, milk, ranch dressing mix, and half of the cheese to the potatoes.
- Mash the potatoes until smooth and creamy.
- Stir in bacon bits and green onions.
- Transfer the mixture to a baking dish.
- Top with the remaining cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- Feel free to add your favorite cheese.
- For a spicier version, add jalapeños.
