- 2 lbs potatoes, diced
- 1 lb smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 1 cup sour cream
- 1/2 cup milk
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine diced potatoes, olive oil, salt, and pepper.
- Spread the potatoes on a baking sheet and bake for 25 minutes.
- While the potatoes are baking, mix sour cream, milk, and ranch dressing mix in a separate bowl.
- After 25 minutes, add the smoked sausage to the potatoes and bake for another 15 minutes.
- Remove from the oven and pour the ranch mixture over the potatoes and sausage.
- Sprinkle cheddar cheese on top and return to the oven for 10 more minutes or until cheese is melted.
- Serve warm.
