- 2 pounds baby potatoes
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and cut the baby potatoes in half.
- In a large bowl, mix olive oil, ranch seasoning, salt, and pepper.
- Add potatoes to the bowl and toss to coat.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes until golden and tender.
- Remove from oven and let cool slightly.
- In a separate bowl, mix sour cream and milk.
- Add the baked potatoes to the sour cream mixture and toss gently.
- Sprinkle cheddar cheese on top and serve warm.
