- 1 cup shredded cheddar cheese
- 1 cup cornbread mix
- 1/2 cup milk
- 1 egg

- 1/4 cup sliced olives
- Sour cream for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Add taco seasoning and water, stir, and simmer for 5 minutes.
- In a bowl, combine cornbread mix, milk, and egg.
- Line a cupcake pan with cupcake liners.
- Pour a small amount of cornbread mixture into each liner.
- Add a spoonful of taco meat on top.
- Sprinkle with cheddar cheese, diced tomatoes, onions, and olives.
- Top with more cornbread mixture.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly and top with sour cream before serving.
