- 1 cup ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup cornmeal
- 1/2 cup milk
- 2 large eggs
- 1/4 cup chopped onions
- 1/4 cup chopped bell peppers
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Brown the ground beef in a skillet and drain excess fat.
- Add taco seasoning and water; simmer for 5 minutes.
- In a bowl, mix cornmeal, milk, eggs, garlic powder, salt, and pepper.
- Stir in cheese, onions, and bell peppers.
- Fill muffin tin with the mixture halfway.
- Add a spoonful of the beef mixture on top.
- Top with more cheese.
- Bake for 20-25 minutes or until golden.
- Let cool before serving.
Notes
- Serve with sour cream and salsa.
- Can use ground turkey instead of beef.
- Adjust spice level with additional seasoning if desired.
