A quick and easy cheesy taco pasta skillet perfect for weeknight dinners.

- 8 oz. elbow macaroni
- 1 lb. ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes (14.5 oz)
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Cook the macaroni according to package instructions. Drain and set aside.
- In a large skillet, brown the ground beef over medium heat.
- Add taco seasoning, diced tomatoes, and beef broth to the skillet. Stir well.
- Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
- Add the cooked macaroni to the skillet and stir to combine.
- Mix in the cheddar cheese and sour cream until melted and creamy.
- Top with chopped green onions before serving.
Notes
- Feel free to use ground turkey or chicken as a substitute for beef.
- Add your favorite toppings like jalapeños or avocado.
